In this segment of The Marc and Mandy Show, Linda Peters of Goodies Bake Shop shows you how to make an individual version of a Tia Marie Cookie-Cake that is quick and easy to put together for last minute entertaining.

What you’ll need: cookies, simple syrup, Italian espresso, whipping cream, chocolate ganache, white chocolate, canola oil, chocolate chips 

Step 1: Dip Your Cookie

First, combine Italian espresso and simple syrup in a bowl. Then, dip your cookies into the bowl to evenly coat them. These cookies will form the bottom of the Tia Marie. 

Step 2: Apply Whipping Cream

Next, add a little bit of espresso to your whipping cream, and then distribute a layer of whipping cream to the cookies. 

Step 3: Repeat Steps 1 & 2

Next, dip another round of cookies in the espresso/simple syrup mixture, and place them on top of the whipping cream. The espresso will soften up the cookies, giving them a cake-like consistency. Top the second layer of cookie with another layer of whipping cream; this time, leaving a small well in the middle of the whipping cream, to accommodate a dollop of ganache.

Step 4: Chocolate Ganache

Finally, apply a dollop of chocolate ganache to the center of each individual Tia Marie. Finish off the desert by sprinkling chocolate chips on top.
