Beef & Guinness Stew Recipe for St. Patrick’s Day

What you’ll need: Guinness, beef chuck ribs, flour, slab bacon, mushrooms, celery, carrots, beef stock, potatoes
Step 1: Prepare Your Chuck Ribs
First things first, debone your chuck ribs and cut it into pieces. Coat the cut pieces in flour and sear all the sides on a hot skillet to brown it. Once all the sides are browned, remove the chuck ribs from heat, and put them aside.
Step 2: Cook Your Bacon, Mushrooms, and Veggies
Next, using the leftover juices from the chuck ribs, cook your diced up bacon, mushroom, carrots, and celery in the already-hot skillet. Stir occasionally to ensure the contents cooks evenly.
Step 3: Add In Your Guinness
Next up: a can of Guinness beer. How much beer you add to your skillet is completely up to you. Add the beer to the bacon, mushroom, and veggie combo, ensuring to pour the beer slowly, to mitigate mess. Stir occasionally. The idea here is to cook the beer enough to reduce the alcohol content.
Step 4: Add In Your Beef Stock
Once the beer has been reduced, add beef stock to the skillet and let it cook. Stir occasionally, until the mixture is warm and bubbly.
Step 5: Add In Your Ribs
Once the contents of your skillet is warm and bubbly, add your previously cooked chuck ribs into the skillet. Then, transfer the contents into an oven-safe pan, and roast it in your oven for about three hours. TIP If you’re finding your sauce to be on the thin side, simply transfer the contents back into a pan after cooking. This should effectively thicken up the sauce before your serve it your guests.
