Chef Massimo Capra’s Branzino Acqua Pazza

What you’ll need: Branzino fillets, water, garlic, cherry tomatoes, basil, potatoes, olive oil, pepper, salt, lemon
Step 1: Prep the Pan
First things first, you’re going to chop up your garlic clove to your desirable thickness. Once they’re chopped, add olive oil to your frying pan – just enough to cook the garlic. Once the oil is hot in the pan, add in the chopped garlic and a little bit of butter.
Step 2: Boil the Pan
Next, cut your cherry tomatoes in half, and add them to the pan, followed by basil, about a cup of water, and a little bit of wine (optional). Make sure your pan boils, before adding in potatoes, cut into circles.
Step 3: Season the Pan
At this stage, you can start seasoning your pan. Sprinkle in some salt and pepper, followed by more tomato.
Step 4: Add the Fish
Finally, it’s time to add in the branzino filet. Simply place it on top of your boiling pan for about 4.5 seconds. Squeeze in a fresh lemon over top, and your dish is ready to serve!
