Homemade Mayonnaise Recipe
No burger, sandwich, or coleslaw is complete without mayo, and making this popular condiment at home is not as tricky as you might think! In the spirit of all-things-mayonnaise, Celebrity Chef Melissa Mokarenko shares her recipe that you won’t regret DIY-ing.

Step 1: Whisk
In a large bowl, combine egg yolks (no egg whites), a little bit of mustard, lemon juice, and apple cider vinegar. Once you’ve got your ingredients in the bowl, whisk everything together. TIP According to Chef Melissa, this recipe will work best if all of your ingredients are at room temperature beforehand.
Step 2: Thicken & Bind
Keep whisking the contents of your bowl as you add oil slowly into the mix. This might require an extra set of hands or an automated mixer. Adding around 3/4 of a cup of oil will thicken and bind together your ingredients. Keep on whisking the contents of your bowl until you have something that resembles the consistency of mayonnaise.
Step 3: Season
How you season your mayo is completely up to you. A basic rendition calls for salt and pepper, but if you’re in the mood for something with a kick, you can experiment with hot sauce, onions, or curry powder.
