Next time that you are at the grocery store, simply grab a few ingredients and enjoy mixing them together to make this yummy Moroccan carrot salad.
Pete Evans’ Moroccan Carrot Salad Ingredients:
- carrots
- dried currents
- almonds or another nut of your choice
- sumac
- mint
- cilantro
- salt and pepper
- extra virgin olive oil
- apple cider vinegar
- honey, ginger
- chili flakes
Step 1: Grate Carrots
To get this recipe started, grate some carrots. Once you’ve got that done, add in some dried currents, to add a little bit of sweetness and texture to the dish.
Step 2: Add Nuts
Next, add in your nuts of choice. In the video above, Chef Pete Evans opts for almonds, but pistachios or walnuts work as well.
Step 3: Add Sumac
Next, add in sumac, which is a Middle Eastern spice that has a citrus flavor. Be generous with the sumac.
Step 4: Add Fresh Herbs
Next up are your fresh herbs. Add mint, coriander, and cilantro into the mix. Follow that up with some salt and pepper.
Step 5: Create the Dressing
The dressing is comprised of extra virgin olive oil, apple cider vinegar, a little bit of honey, ginger, and chill flakes. Pour your dressing over your salad, mix it all together, plate and enjoy!
