Tandoori Masala Omelette with Iced Coffee

What you’ll need: 3 eggs, 1 tsp tandoori masala, 2 tsps scallions, 2 tsps red onions, 2 tsps roma tomatoes, 1 tbsp butter, 1/3 tsp salt, green onion
Step 1: Whisk
Just as you would if you were preparing a traditional omelette, the first step is to crack your eggs into a bowl and whisk them up until all the yolk has been broken down.
Step 2: Spice
As you’re whisking, you can add in half a teaspoon of the tandoori spice mixture.
Step 3: Cook
Next, you can make you way to your stove. Turn the element to medium heat. Once your pan is nice and hot, add in your diced onions, followed by salt and pepper. Let the onions cook for about a minute before adding diced green onions, diced tomatoes, and butter into the pan. Let everything cook for another minute or so before removing the contents of the pan from the heat.
Step 4: Combine
Next, turn your heat down to low, and add in some more butter. Once the butter has melted, pour your omelette mixture over top. Once the omelette has cooked a little on one side, distribute the pre-prepared onions and tomatoes back into the pan. When you flip the omelette to cook the other side, you can add more butter as desired
