Expert Q&A: Healthy Cooking Tips
While there’s nothing that hits the spot quite like a steak dinner, red meat can be harmful to your health if eaten in excess. Fortunately, there are ways to enjoy steak while minding your health. In this episode of The Marc and Mandy Show, Chef and Restauranteur Mark McEwan shares some tips and tricks for portion control and healthy cooking.
Q: How can someone who’s a meat eater be more cognizant of eating less meat?
Mark McEwan: I’m a big meat lover, but what I find I do now is I eat half the portion of meat. I never eat a big steak. I eat maybe four ounces of protein, where I used to eat maybe six to eight ounces of protein. And I really enjoy the veg side of my dinner much much more. I think it’s more interesting, I think it’s more diverse, and frankly I think it’s full of flavor. It’s the better component on the table for me, so I focus on the salad, on the vegetable, on the potato, all those trim items, and I just cut my portion of meat in half.
Q: What’s your best tip for keeping herbs fresh?
Mark McEwan: If you’re buying herbs for home I would recommend—and we do this in the restaurant, we take a paper towel, we wet it, and then we take individual bundles, say one inch round bundles of herbs, and we roll them into paper towels. And then we put them in a container and we we put a moist towelette over top of that. So, that’s a great way to keep them hydrated. And you have to remember they’re a living plant, so you need to water them. So, that addition of water and moisture keeps them at a premium level.
