How To Create a Crepe Buffet for Bunch
The key to nailing your next brunch together is simpler than you think. In this segment, Chef Melissa Makeranko shares with us how to execute a simple but crowd-pleasing brunch idea: a crepe buffet!
What you’ll need: 1 1/2 cups of flour, 500 ml of milk, 5 eggs, 1/4 cup olive oil, sugar (for sweet) OR salt and pepper (for savory)
Step 1: Pick Your Pallet
Crepes are one of those unique food items which can be prepared to be sweet or savory. That said, the first step of planning your crepe buffet should be to select which pallet you’d like to cater to: sweet or salty? You can also do both!
Step 2: Gather Your Ingredients
For a sweet crepe, you’ll need items such as fresh fruit, whipping cream, chocolate sauce, and jam. For a savory crepe, you’ll need items such as mushrooms, ham, cheese, and selected vegetables.
Step 3: Prepare Your Crepes
Once you’ve rounded up your filler ingredients, you can start preparing your crepes. To make crepes, simply combine flour, milk, eggs, olive oil, and sugar OR salt and pepper in a blender and puree. Then, let the mixture sit for about 20 minutes before heating butter on a cast iron skillet. You can then pour portions of the batter into your hot skillet and cook the crepe until it’s golden brown. TIP Crepes taste best fresh, so you might want to hold up on whipping up your first batch until guests are due to arrive.
Step 4: Select Your Fillings
This part is up to your guests! Have each person fill their crepe with the sweet or savory fillings of their choosing, then roll up the crepe to seal in the fillings, and pop the rolled crepes into the oven for about five minutes.
