Vancouver Spot Prawn Roll
Raise your hand if you love comfort food! In this episode of The Marc and Mandy Show, NHL Chef Robert Bartley shares a recipe for a Vancouver Spot Prawn Roll: a sandwich-style comfort food that is sure to satisfy your cravings!
What you’ll need: 8 oz BC Spot Prawns, 1/4 cup minced shallots, 1/3 cup celery (finely diced), 1/4 cup juiced lemon, 3/4 cup mayonnaise, 1 tbsp Old Bay Seasoning (plus a dash), 1 cup iceburg lettuce (shredded), 4 top cut hotdog bugs, 1/2 cup clarified butter
The Recipe:
- Start with some BC Spot Prawns that have been lightly blanched. Cut them up into chunks. Put the chopped up prawns into a mixing bowl.
- Add minced celery, minced shallots, mayonnaise, and Old Bay Seasoning into the mixing bowl. Mix everything together.
- Next, you’ll need your 4 top cut hotdog buns. Pan fry each bun individually, on medium-low heat, with clarified butter. Toast each bun until it is golden.
- At this stage, you can begin to build your roll. Add some lettuce and your Spot Prawn Mix into each toasted bun.
- Garnish your Spot Prawn Roll with Old Bay Seasoning and celery leaves for a pop of color, plate, and enjoy!
