88639hSome seven million acres of farmland in Canada are dedicated to barley, yet a surprisingly high number of us don’t regularly include it in our meals. Not only is barley delicious on its own and a great natural ingredient, this affordable superfood packs a significant nutritional punch.

As a whole grain, it contains protein, insoluble and soluble fibre, healthy fatty acids, B vitamins, iron, calcium, potassium, phosphorus, magnesium, manganese, zinc, and antioxidants. Barley has the highest total dietary fibre content of all food grains. It’s also the only cereal grain to contain all isomeric forms of vitamin E — an important antioxidant, anti-inflammatory, and immunity enhancer.

The high level of soluble dietary fibre in barley helps lower cholesterol and creates a feeling of fullness for a longer time period, supporting any weight management efforts. Barley also has a lower glycemic index than any other cereal grain, helping to regulate blood sugars and making it a great choice for a diabetic diet.
