Sausage Tortellini Soup
‘Tis the season for soup! On this episode of The Marc and Mandy Show, Mandy and Marc show viewers how to make sausage tortellini soup. Keep reading for the step-by-step directions.
What you’ll need: 1 pound sweet Italian sausage, casings removed, 1 cup chopped onion, 2 cloves garlic, minced, 5 cups beef broth, ½ cup water, ½ cup red wine, 4 large tomatoes – peeled, seeded and chopped, 1 cup thinly sliced carrots, ½ tablespoon packed fresh basil leaves, ½ teaspoon dried oregano, 1 (8 ounce) can tomato sauce, 1 ½ cups sliced zucchini, 8 ounces fresh tortellini pasta, 3 tablespoons chopped fresh parsley
Step 1: Brown sausage
Using a Dutch oven, brown your sausage. Once browned, remove the sausage and drain the pot. At this stage, you can reserve 1 tablespoon of the drippings for later use.
Step 2: Saute
Next, saute your onions and garlics, using the drippings as a base. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil and then reduce the heat.
Step 3: Simmer
Next, simmer the uncovered pot for 30 minutes. After 30 minutes, you can skim the fat from the top of the soup. Add in zucchini and parsley and simmer again. After 20 minutes, add in your tortellini. Simmer for 10 minutes more.
Step 4: Serve and enjoy!
Finally, garnish with some parmesan cheese. Your soup should now be ready to serve and enjoy!
