Zucchini Chips Recipe
Ingredients:
- 2 Zucchini
- Olive oil (about a tablespoon)
- 1 1/2 cups bread crumbs
- 1/2 cup parmesan cheese
- Pinch of salt
- Pinch of pepper
- Preheat oven to about 400.
- Cut zucchini into 1/8 inch thick rounds using a mandoline. Place in a bowl and drizzle with olive oil. Toss to coat.
- Combine bread crumbs, parmesan cheese, salt and pepper in a different bowl. Press zucchini rounds firmly into the mixture, coating on both sides. Lay on a greased cookie sheet.
- Cook 25 to 30 minutes, flipping half way through.
Variations:
Salt & Vinegar: Soak rounds in vinegar for an hour and then sprinkle with salt before cooking.
Chipotle: Add a bit of chipotle spice to the dry mix.
