Broccoli & Cheddar Soup


  • 1 Bunch broccoli, chopped
  • 1 med. onion, chopped
  • 4 cloves garlic
  • 1 tbsp. olive oil
  • 1 lt. vegetable stock
  • 1 cup 35% cream
  • 2 cups shredded cheddar


  1. Preheat a stock pot and add the oil, onion, and garlic; sautée gently until translucent and then add the broccoli and the stock enough to cover the broccoli; stir and simmer for about 20 minutes.
  2. Taste for correct seasoning and add the cream; use an immersion blender or a blender and completely purée the soup; strain through a fine sieve and serve immediately with a good dousing of shredded cheddar.
