Broccoli & Cheddar Soup
Ingredients
- 1 Bunch broccoli, chopped
- 1 med. onion, chopped
- 4 cloves garlic
- 1 tbsp. olive oil
- 1 lt. vegetable stock
- 1 cup 35% cream
- 2 cups shredded cheddar
Directions
- Preheat a stock pot and add the oil, onion, and garlic; sautée gently until translucent and then add the broccoli and the stock enough to cover the broccoli; stir and simmer for about 20 minutes.
- Taste for correct seasoning and add the cream; use an immersion blender or a blender and completely purée the soup; strain through a fine sieve and serve immediately with a good dousing of shredded cheddar.
